Oh-M-Gee Nut Butter Cookies

GLUTEN FREE- NO FLOUR – NO SUGAR- NO DAIRY- CONTAINS PEANUTS

Ingredients:

1 ½ cups creamy almond butter (fresh ground bulk), room temperature

½ cup creamy peanut butter

½ cup local raw honey

2 large eggs

2 teaspoons baking soda

½ teaspoon fine sea salt

½ teaspoon pure vanilla extract

Preheat the over to 350 degrees. Line 2 baking sheets with parchment paper. This is important, it will not work with only non stick baking sheets, the parchment paper is a must.

Add all the ingredients to a large mixing bowl and mix together on medium-high with a hand mixer for 60-90 seconds, or until the mixture comes together like a thick dough. It should be very thick and sticky.

Spoon the dough onto the parchment paper in tablespoon sized portions, leaving room between them to spread out (about 2 inches apart).

Bake for 10-11 minutes or until lightly brown on top, but not too dark on the bottom. The bottom will burn easily, so make sure to check at 10 minutes.

Slide the parchment paper with the cookies still on it onto a cooking rack so the cookies do not continue to cook on the cookie sheet. Let cool 5-10 minutes before eating.
