Whole Body Smart Sunflower Power Dressing

Baked Sweet Potato and Cayenne Salad with Sunflower Power Salad Dressing
Slice sweet potatoes and lightly rub with coconut oil. Spread out on baking sheet and sprinkle with cayenne, salt, pepper and garlic powder. Bake for 30-45 minutes at 300 degrees. Slices should be firm but cooked all the way through (your fork should be able to go through the slice).
Salad: Green lettuce of choice, cherry tomatoes slices, radish sprouts, sliced red onion, kale massaged with lemon juice and salt, sliced radishes.
Dressing:
1/2 Cup sunflower seeds soaked in water overnight
1 majoon date
1/4" ginger root
Juice from 1 lemon
1 Tablespoon tahini paste
1 small zuchinni cut into chunks
2 small or 1 large garlic clove
1 cup water
1 teaspoon salt
Put into blender and blend until smooth. Add more water if you prefer a thinner dressing.
Toss salad with dressing and add warm sweet potatoes. Enjoy....
